Halloween Themed Snack Muffins


Now that October is here, I’m already getting in the Halloween spirit!!! It’s actually my fave holiday of the year. So of course I’m starting to get inspired in the kitchen, beginning with these snack muffins 🎃

They are vegan, gluten free, sugar free and full of flavour! Super moist and delicious. They make a great snack or brekkie to go with that matcha latte!!!!

Made with pumpkin so they are orange and of course chocolate chips!!! Give out these instead of that candy 😂

Ingredients:

1 cup mashed banana
1 1/2 cups pumpkin puree
1/2 cup honey
1/4 cup melted coconut oil
1 tsp baking powder
1 tsp baking soda
1/4 tsp sea salt
1 tsp cinnamon
2 cups gluten free 1:1 flour blend
1/3 cup chocolate chips

Instructions:

Preheat oven to 375°F and line a 12 hole muffin tin with liners. Set aside.
In a large bowl, combine mashed banana, pumpkin puree, honey, and oil. Mix well.

Add remaining ingredients except chocolate chips to the bowl and mix until all of the ingredients are well incorporated.

Fold in chocolate chips.

Portion out the batter into the prepared muffin tin and top with extra chocolate chips if desired. Makes 10-12 muffins.

Bake for 20-22 minutes or until a toothpick inserted into the middle of the a muffin comes out clean.

Remove muffins from the oven and let cool for 5 minutes before enjoying.

Once completely cool, store muffins in an airtight container.

Ps….they are really good with some drippy almond butter on top!

Sprouted Grains Toast with Coconut Yogurt, Blueberries & Almond Butter

Looking for the perfect pre or post workout snack? Give this a try! Filling, healthy and tasty! Goes great with a matcha green tea latte 👏

Ingredients:

  • 1 piece sported grain bread, gluten free or any type of whole grain bread
  • handful of fresh blueberries
  • 2-3 tbsps of drippy almond butter
  • 3 tbsps of vegan coconut yogurt
  • Dash of cinnamon

Instructions:

  1. Toast bread
  2. spread yogurt on toast, then blueberries
  3. with a small spoon, drizzle on almond butter
  4. Sprinkle cinnamon on top
  5. enjoy!

Post Workout/Yoga Fuel


After a strength training workout or a yoga class, I love to get something that’s nutrient dense and fresh into my belly but not too heavy. This snack does it perfectly 👌

With all the fresh summer local farmer markets fruit avail, this snack is easy to prep, has lots of good fats in it, healthy carbs and some protein too, making it perfect for a quick healthy snack.

What I put into mine can be adjusted depending on what fruit you have handy, but try to put in the added options for all the goodness!!!


Ingredients:

1/3 canteloupe or any other type of melon, cubed

5-6 freshly sliced strawberries or blueberries

2 tbsps of unsalted nut butter, drippy is best if you can

1/2 tsp cacao nibs

Dash of cinnamon

2 tbsps hemp hearts

1 big tbsp of coconut manna or butter

Toss all that up in a small bowl.

The cinnamon is helpful for blood sugar levels. The coconut manna adds extra fats. Hemp hearts are full of Omega 3 fats and protein. The fresh fruit are a great source of carbs. The cacao nibs gives it that crunch while the drippy nut butter is protein and added fats too!!!

Beautifying Mango Raspberry Smoothie


Interested in getting some beautifying properties from your smoothies? This smoothie here has all the ingredients you need to build beautiful and healthy skin! Mangoes and raspberries have been known for their skin radiant boosting properties while the collagen and the coconut water are super hydrating for your skin.

I love this combo of ingredients in this smoothie because it tastes so refreshing while I know it’s hydrating and boosting collagen production in my skin. Always a plus in my opinion hahahahaha.

You can use any type of collagen powder you like. My fave is Vital Proteins. It has a clean taste to it and I don’t even notice that it’s in there once I add all the other ingredients. You can use 1 or 2 scoops depending on how much collagen you need in your body. For me, I need about 40 grams per day. Vital Proteins has a great calculator you can use to figure out just how much you need. You can check them out here.


Ingredients:

4-5 pieces of frozen mango

1/3 cup frozen or fresh raspberries

2-3 pieces of frozen cauliflower for added thickness

1 tsp chia seeds and 2 tbsp flax seeds

1 cup coconut water

1 tsp of coconut oil

Place all ingredients into a high speed blender and blend until smooth and creamy.

Enjoy right away and imagine all that goodness going right into your skin!

Mango Strawberry Smoothie


I love a good mango smoothie that’s rich and creamy but without all that dairy. When I make smoothies I love them to be the consistency of a milkshake.

This smoothie is packed with fresh mango, coconut milk and water, frozen cauliflower and strawberries. With the added cauliflower in it, it makes the smoothie super creamy and thick yet low carb and low on the glycemic index. You would think that there is banana in it because it’s so thick but it’s the cauliflower and best of all you don’t even taste it!

Ingredients:

5-6 pieces of frozen or fresh mango

3-4 pieces of frozen cauliflower

1 cup of nut milk

1/2 cup of Coconut water

5-6 frozen strawberries

1 tbsps of coconut milk, the thick part

2 tbsps of flax seeds

1 tsp of chia seeds

Dash of cinnamon

To make this, place all ingredients into a high speed blender and blend until smooth and creamy.

So good!
